I am using the Beta version of Outlook 2010 with Windows 7 Pro (64 bit).
Sent emails are not logged in the Sent Items folder nor do saved drafts
appear in the Drafts folder.
I have confirmed that the relevant settings are checked in the Mail
Settings. Any ideas what I can do to solve this problem?

I have tried with both options (save to Sent Items and save to original
folder) and neither seems to deliver a copy of a sent message. As regards
the Drafts, I click the Save icon, which in Outlook 2003 automatically saved
the item in the Drafts folder. This doesn't appear to work.

Chiming in here with the final version of Office 2010.
If you go to Options > Mail > Save Messages, make sure that "Save copies of messages in the Sent Items Folder" is checked. Apparently this setting can become unchecked and thus Outlook 2010 won't save any email sent out even if you have your IMAP account set to save Sent Items in an IMAP folder. It fixed the issue with me after a few hours of troubleshooting
